Spinach Artichoke Dip

The CREAMIEST Spinach Artichoke Dip to serve is packed with spinach, artichoke, and a cheesy, gooey sauce. This version is also 100% keto approved!

It also combines the amounts of any ingredients that are used more than once.

GROCERY LIST: Spinach Artichoke Dip

  • Spinach: 10 oz fresh or frozen

  • Artichoke Hearts: 1 can 14 oz

  • Mozzarella (shredded)

  • Parmesan Cheese (grated)

  • Cream Cheese

  • Sour Cream

  • Mayo

INGREDIENTS LIST

  • Spinach: 10 oz fresh (or frozen thawed, drained, excess moisture squeezed)

  • Artichoke Hearts: 1 can (14 oz drained and chopped)

  • Mozzarella (shredded): 4 oz

  • Parmesan Cheese (grated): 1/4 cup

  • Cream Cheese: 4 oz

  • Sour Cream: 1/2 cup

  • Mayo: 1/2 cup

  • Olive Oil: 2 Tablespoons

  • Garlic (minced): 2 cloves

  • Red Pepper Flakes: 1/4 Teaspoon

  • Salt and Pepper: to taste

  • Hot Sauce: A couple dashes

INSTRUCTIONS

Prep the foods

  • Mince the Garlic (2 or more cloves)

  • Chop the artichokes

  • Thaw the Spinach (if using frozen) and squeeze excess water

Cook Spinach in a large saucepan or deep frying pan

  • Heat Olive Oil (2 TBSP) on medium heat.

  • Add Garlic (2 or more cloves) and cook until fragrant (30 seconds)

  • Add Spinach (10oz) in handfuls, letting each handful wilt before adding the next

  • Add Crushed Red Pepper (1/4 Tsp) and Salt and Pepper to taste

  • Cook for approx 3 minutes — until spinach liquid is evaporated


Add more Ingredients

  • Add Artichokes (chopped) and reduce heat to low

  • Add Cream Cheese (4 oz) + Mozzarella (4 oz)

  • Stir until mixed and melted (~ 3 mins)

  • Stir in

    • Sour Cream (1/2 cup)

    • Parmesan (1/4 cup)

    • Mayo (1/2 cup)

  • Stir in Hot Sauce (if desired)


Scoop and Bake

  • Transfer dip to an oven-safe dish

  • Place on top rack in oven and broil for 5-8 mins until golden brown and bubbly.



Enjoy with sliced baguette bread, crackers, tortilla chips, sliced veggies, pork rinds, etc.
