  • Chicken thighs/breasts: 6 pieces / ~2 lbs

  • Bell Peppers: 4

  • Onion: 1 small

  • Sour Cream: 1 cup

  • Cream Cheese: 4 oz

  • Cheddar Cheese (shredded): 2 cups


INGREDIENTS

  • Chicken thighs/breasts: 6 pieces

  • Bell Peppers (sliced): 4

  • Onion (thinly sliced): 1 small

  • Sour Cream: 1 cup

  • Cream Cheese (softened): 4 oz

  • Cheddar Cheese (shredded): 2 cups

  • Olive Oil: 1 Tbsp

  • 1 Taco Seasoning packet

  • Optional: Sour Cream, Avocado slices or Guacamole, Cilantro, Salsa, Hot Sauce


INSTRUCTIONS

  1. Preheat oven: 350 degrees F


  2. Prepare Ingredients

    • Shred the Cheddar Cheese

    • Wash the produce

    • Cube the Peppers

    • Cube the Onion


  3. Cook Chicken

    • In an oven-proof skillet, over medium heat, saute the chicken in olive oil until the chicken is done. The safe cooking temperature of chicken is 165ΒΊ

    • Remove from skillet and set aside.


  4. Add Vegetables

    • Add Onion and Peppers & saute until tender. (~3 to 5 minutes depending on preference).

    • Meanwhile, soften Cream Cheese (4 oz)


  5. Make the Creamy Sauce

    • Add Chicken back to the pan

    • Stir in:

      • Taco Seasoning

      • Sour Cream (1 cup)

      • Cream Cheese

    • Mix well

    • Sprinkle the top with cheddar cheese


  6. Bake for 10-15 mins or until cheese is bubbly.

    *Optional: serve with Avocado, Guacamole, Sour Cream, or Salsa.
