JAMBALAYA — Keto Version

Keto jambalaya with cauliflower rice is a healthy version of the classic. It has just as much flavor! This low-carb jambalaya recipe makes an easy one-pot keto meal.

*** This Grocery list assumes you have kitchen staples such as oils/butter & a well-stocked spice cabinet.

It also combines the amounts of any ingredients that are used more than once.

GROCERY LIST: Jambalaya

  • Andouille Sausage: 1 lb

  • Shrimp (large): 1 lb

  • Chicken Broth (or other broth): 1/4 cup

  • Cauliflower Rice (fresh or frozen): 2 lbs / 2 bags

  • Bell Peppers: 2-3 Large

  • Diced Tomatoes: 1 normal size can — 14.5oz

  • Celery: 1/2 cup

  • Onion: 1/2-1 large

  • Green Onions **optional, for garnish

  • Garlic: 6 cloves

INGREDIENTS

  • Andouille Sausage (sliced thinly): 1 lb

  • Shrimp (large, peeled and deveined, thawed if frozen): 1 lb

  • Cauliflower Rice (fresh or frozen): 2 lbs / 2 frozen bags

  • Bell Peppers (diced): 2-3 Large

  • Onion (diced): 1/2-1 large

  • Celery (diced): 1/2 cup

  • Green Onions **optional, for garnish

  • Diced Tomatoes: 1 normal size can — 14.5oz

  • Chicken broth (or other broth): 1/4 cup

  • Garlic (minced): 6 cloves

  • Olive Oil: 2 Tbsp

  • Salt and Pepper

  • Cajun Seasoning: 2 Tbsp

    • Paprika: 2 Tbsp

    • Garlic Powder: 2 Tbsp

    • Salt: 1 Tbsp

    • Oregano: 2 tsp

    • Thyme: 2 tsp

    • Onion Powder: 2 tsp

    • Cayenne Pepper: 2 tsp

    • Red Pepper Flakes: 1 tsp

    • Corriander Ground: 1 tsp

INSTRUCTIONS

  1. Prep the foods

    • Prepare and thaw the Shrimp (1 lb)

    • Wash the vegetables

    • Dice the Bell Peppers (2-3) + Onion (1/2 - 1 large) + Celery (1/2 cup)

    • Mince the garlic (6 cloves)

    • Slice the Andulies Sasauge

  2. Make the Cajun Seasoning (if you don’t have a pre-mix)

    • Mix together in a small dish:

      • Paprika: 2 Tbsp

      • Garlic Powder: 2 Tbsp

      • Salt: 1 Tbsp

      • Oregano: 2 tsp

      • Thyme: 2 tsp

      • Onion Powder: 2 tsp

      • Cayenne Pepper: 2 tsp

      • Red Pepper Flakes: 1 tsp

  3. Cook the Vegetables

    • Heat the Oil (1-2 Tbsp) in a large stew pot over medium heat.

    • Add the veggies: Bell peppers, Onion, Celery

      • Saute for 5-8 mins until the vegetables are softened.

  4. Add the sliced Sausage

    • Saute for about 5 mins, until browned

    • Add the Garlic

      • Make a well in the center and add the minced garlic.

      • Let it sizzle ~ 30 seconds, until fragrant, then stir in.

  5. Add more ingredients:

    • Cauliflower Rice (2 bags)

    • Diced Tomatoes (1-2 can/s)

    • Chicken Broth (1/4 cup)

    • Cajun Seasoning (2 Tbsp)

      1. Stir together, then add the shrimp.

  6. Finish Cooking

    • Increase heat to high to bring to a simmer, then continue to simmer uncovered, stirring occasionally, until the cauliflower is tender, shrimp is cooked through, and liquid is reduced ~ 5-7 mins. (It will release more liquid at first and then reduce in volume again as it simmers more.)

  7. Taste test. Add Salt and/or more Cajun seasoning if you like.

  8. If desired, garnish with Green Onions and/or Parsley.
